Today, edible coatings are used to preserve food, which have been replaced by natural materials due to the harmful nature of chemicals for the human body and the environment. Medicinal plants, like other food, lose their properties over time. Today, most of the people in the world have become aware of the dangers of using chemical drugs and have turned to using medicinal plants to treat their diseases. The aim of this research is to investigate the effect of different concentrations of guar gum and sapstan mucilage on the quality characteristics of fresh sour tea sepals. In this research, the fresh sepals of sour tea were immersed in the desired solutions for 5 minutes and after drying, they were packed and stored in the refrigerator, and once every four days sampling and quality characteristics of sour tea, including phenol, antioxidant, anthocyanin, vitamin C, Weight loss, flavor characteristics, soluble solids, titratable acidity and pH were evaluated. The experiments were carried out in a completely randomized design with three replications, and data analysis was done using SPSS and R software, graphs were drawn using Excel.This test was done once with concentrations of zero, 0.25, 0.5 and 1% of each gum or mucilage, and once again the combination of gum and mucilage was evaluated simultaneously. The results showed that in the treatment of different concentrations of guar, all the parameters except the phenol quality, the rest of the parameters showed significant changes compared to the control sample. The parameters of weight loss, phenol, antioxidant and taste increased with the passage of time in the concentration of 1% guar. In terms of titratable acidity and soluble solids, all treatments performed better than the control sample. It should be noted that the anthocyanin parameter of the control sample showed the best performance compared to the treated samples. In the treatment of the effects of the mucilage, the results showed that the properties of pH, titratable acidity, vitamin C, taste properties, soluble solids generally increased, and at the end of the measurement period, there was a significant difference between the treatments. In terms of anthocyanin and antioxidant properties, despite the increasing values, the control sample has shown better performance. In terms of weight loss, all the treatments had an increasing trend, and the highest performance belonged to the treatment with a concentration of 1%, and the lowest was observed in the control sample. The amount of phenol in all treatments, except for the treatment with a concentration of 0.5%, of Cordia myxa mucilage during the storage period. There was a decreasing trend. The analysis of the results of the mutual effects of guar gum and Cordia myxa mucilage treatment showed that all traits except phenol were generally increasing. In all treatments, the control sample had the lowest performance, except for vitamin C and soluble solids.
